Buckwheat is a seed from a flowering fruit that is related to rhubarb. It’s completely gluten free and totally unrelated to wheat. It contains a complete protein compliment of all eight essential amino acids, plus:

- Magnesium
- Manganese
- Niacin
- Pantothenic acid
- Phosphorous
- Vitamin B6
- flavonoids
Buckwheat can lower levels of glucose and insulin, helping to keep blood sugar levels optimal. It also contains two amazing flavonoids which act as antioxidants, quercetin and rutin. Flavonoids lower LDL (bad cholesterol) in the blood.
Buckwheat is rich in B vitamins as well as phosphorus, magnesium, iron, zinc, copper and manganese. It contains the eight essential amino acids and two amazing flavonoids. It’s good for you and is a perfect [wheat, oat, rice, couscous] alternative.
It can be boiled and cooked like a grain, it can be lightly toasted and eaten dry, it can be floured and baked in bread, it can even be sprouted and eaten raw.
Perfect in salads, stews and casseroles… makes a great Coconut Buckwheat Porridge and a delicious Vegan Mac & Cheese (pictured). Also makes a super biscuity cake base when lightly toasted and mixed with dates… yum!
